The leek is a biennial herbaceous vegetable plant that grows 20 to 90 cm tall and is cultivated for its leaves (pseudo-stems), which are eaten as vegetables.
Its elongated, lanceolate, opposite, flat, dark green or yellowish-green sheathing leaves are shaped like strips or ribbons marked with parallel veins. The base of the leaves forms a pseudostem called a “shaft,” the underground portion of which is white. The greenish-white flowers appear in clusters of umbels at the top of an erect flower stalk in the second year.
