There are two main varieties of celery: stalk celery, with its meaty, crunchy stalks, and celeriac, with its firm, fragrant root. In France, stalk celery production is concentrated in Languedoc-Roussillon, Provence-Alpes-Côte d'Azur, and Rhône-Alpes, with the harvest taking place from July through February, depending on the region.

Italy remains Europe's leading producer, followed by Spain and the United Kingdom. Celeriac, meanwhile, is grown in France mainly in Brittany, Champagne-Ardenne, and the Pays de la Loire region; France ranks as the fourth-largest producer in Europe, behind Poland, Germany, and the Netherlands.

Thanks to these supplemental growing areas and cold storage capacity, celery is available for much of the year, with peak quality in the fall and winter.
