Recognizable by its white bulb and anise-like flavor, fennel is a vegetable that is crunchy when raw and tender when cooked. It is available year-round thanks to imports, particularly from Italy—Europe’s leading producer—and Spain, with demand peaking from December through April, a season ideal for winter salads and slow-cooked dishes. French production, mainly from the Provence-Alpes-Côte d’Azur region, takes over from June through October.
