The cherry is a spherical fruit, usually red in color, ranging from light to dark red or even black.

There are more than 600 varieties of cherries:

  • Burlat: This is the most popular variety of cherries in France. The fruit is red, and its flesh is firm and sweet.
  • Bigarreau: These are red or even dark red cherries. They are a sweet variety with juicy, sweet flesh.
  • Van: This variety produces dark red fruit with small pits. The flesh is firm and sweet.
  • Summit: Similarly , the cherries of this variety are a bright red color. As for their flesh, it is firm, crisp, and sweet.
  • Belgian: The fruit produced by this cherry tree is red in color, sometimes tending toward dark red. It is heart-shaped and has a long stem.
  • Regina: The Regina cherry has a sweet flavor. It is reddish-purple in color, heart-shaped, and has thick, sweet flesh.
  • Folfer: The Folfer cherry tree produces large, round, dark red fruits. The flesh is fairly crisp and juicy. It has a fairly balanced, sweet flavor that can even be slightly tart.
  • Rainier: Unlike the varieties described above, Rainier cherries are golden in color, with reddish-pink hues. They are sweet and have low acidity.
  • Noire de Meched: It has a purple color that turns black as it ripens. Its flesh is firm and crisp, and it has a mild, sweet flavor with no acidity.
